This dish was adapted from EasyKeto4U and it is just delightful. The mayonnaise keeps the tenders juicy and the air fryer crunch really makes the protein pop. ENJOY!
Ingredients:
- 1 lb chicken tenders - trimmed, cleaned and dried
- 1 cup mayonnaise
- 1 cup parmesan - shredded
- 1 cup seasoned Panko
Mix the parmesan cheese with the Panko in a bowl.
Coat each tender in mayo and then press into Panko mix to coat all sides.
Spray the air fryer basket with cooking spray and lay the tenders in the basket with some separation.
"Fry" at 390 for 15 minutes, flipping the tenders over at the six minute mark.
Serve with broccoli or string beans, or in this case some simple
sauteed Bok Choy & Tomato along with Roasted Chick Peas & Pepitas.
A bonus to this dish as we don't like anything going to waste:
Combine any leftover mayo and Panko/Cheese mix and
fry up a crumble to be used as a salad garnish another day!
