Ingredients:
- 1 medium zucchini - sliced
- 1 cup cooked chickpeas
- 1 ball burrata cheese
- fresh mint leaves
- olive oil
- red chili flakes or crushed Aleppo pepper (optional)
- salt & pepper to taste
Preparation:
Grill zucchini slices until tender and slightly charred.
In a bowl, combine grilled zucchini and chickpeas. Drizzle
with olive oil, and season with salt, pepper, and chili flakes.
Place the burrata on top. Garnish with fresh mint leaves and serve immediately. :-)
