Ceci Chorizo

Happy Thursday, dear friends! Did everyone wake up with a smile today? I sure did, because yesterday was a grand day of cooking for me! First I whipped up a batch of Ceci Chorizo for lunch... mainly because I needed some pictures to share with you today... *smirks* Then, for dinner, I went way out of my comfort zone to try a new chicken dish with a Middle Eastern / Indian direction, and boy was that one a success. Stop back tomorrow for the sharing of Chicken & Squash/Barley Pilaf! :-) For now, though, it is Ceci Chorizo time!

Chick peas, with their glycemic index in the mid 30s, are a good choice
for any diabetic meal. Here I have combined them with chorizo and
fresh tomato to create a tasty side dish or simple lunch. 


· 1 - chorizo sausage
· 1 - 15oz can chick peas (ceci)
· 2 plum tomatoes (diced)
· fresh parsley (chopped)
· Marsala (a splash)
· salt and fresh ground pepper to taste


Remove sausage meat from casing and crumble into medium heat fry pan. 

When meat is cooked, add chick peas, wine and parsley and sautee for about five minutes.

 Fold in tomatoes and simmer for 5 more minutes, stirring
occasionally. Add S&P to taste with the tomatoes.

Garnish with fresh parsley for that OMG-this-is-real-purrrrrdy effect ;-)
